These muffins didn't last more than 20 minutes. I made 50 of this mini muffins for my daughter thanksgiving feast at school and they were gone fast.

Bland--lacks moisture and sweetness that you get with pumpkin bread. For the second batch, I added and extra 1/2 cup of brown sugar, which made it better, but still not what I wanted.

Every thing was good with these mini muffins. My husband is in the military and he brought them to work. Everyone at his worked just loved them.
I added pumpkin seeds and a cream cheese mix in the middle (for a nice little extra), so moist and enjoyable.

I used this recipe for my daughter's snack day contribution at school. Because of earlier comments I used buttermilk instead of regular milk to help with moistness. Great taste, not too sweet, put in pumpkin shaped muffin molds and dusted with powdered sugar. They were a hit!!

This recipe is so easy to mix up and have on the shelf ready to go for those last minute baking "emergencies". The muffins are just the best - they're moist and taste better when a day old, although I have a hard time keeping them around that long. I have fun switching around the extras. Sometimes it's raisins, sometimes it's walnuts or dried cranberries or shelled pumpkin seeds; which are a nice touch. I also add 1/4 teaspoon powdered ginger for a little extra zip.
