Pumpkin Banana Nut Bread

Description

Easy-to-make Pumpkin Banana Nut Bread gets an extra flavor twist with the addition of pumpkin.

Ingredients

  • 4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 4 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup (2 medium) very ripe bananas, mashed
  • 3/4 cup vegetable oil
  • 1 cup chopped walnuts

Directions

PREHEAT oven to 350º F. Grease and flour two 9 x 5-inch loaf pans.

COMBINE flour, baking powder, cinnamon, ginger, baking soda and salt in medium bowl. Combine pumpkin, eggs, granulated sugar, brown sugar, bananas and vegetable oil in large mixer bowl; beat until smooth. Gradually beat in flour mixture; stir in nuts. Spoon into prepared loaf pans.

BAKE for 55 to 60 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.

I made this last weekend and it is all gone. It was very easy to make and the flavors were great. Also it was not very sweet which is just how I like my quick breads. I am going to make this bread again.

I first made this a year ago and gave a few loaves to some friends, who to this day are still begging me to make them some more! This bread is moist, delicious, and makes the entire home smell so good! It's now a favorite in the family.

Great Snack Bread

This bread was easy to make. I added an extra can of pumpkin, 1 cup of miniature chocolate chips and 2 extra bananas. I made the bread into mini muffins, mini loaves, and regular size muffins. My husband and son really enjoyed them. Especially my son who is picky about sweet breads. It makes a great snack bread. I will make this bread again.

I guess I'm very spoiled. This recipe didn't have much flavor. It had a wonderful aroma while it was baking. It was easy. But not much flavor. Sorry....
