Apple Cinnamon Pecan Cake

Apple Cinnamon Pecan Cake is a great choice for a simple and tasty treat. Bake this luscious, fruit-and-spice coffee cake and invite several friends over for tea and coffee.


  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2/3 cup NESTLÉ® CARNATION® Evaporated Lowfat 2% Milk
  • 3 cups (about 3 medium) peeled, cored and finely chopped baking apples
  • 3/4 cup finely chopped pecans
  • Powdered sugar
  • Pecan halves (optional)


PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan.

COMBINE flour, baking powder, cinnamon and nutmeg in medium bowl. Beat granulated sugar and butter in large mixer bowl until creamy. Beat in eggs and vanilla extract until smooth. Alternately beat in flour mixture and evaporated milk. Stir in apples and pecans. Spread batter into prepared baking pan.

BAKE for 40 to 45 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 20 minutes. Cut into bars. Dust with powdered sugar before serving and top with pecan halves, if desired.

I've made this cake several times now and it is wonderful. I decided to followed the directions exactly and not change anything on the first try. It was very good, but we like spicy, so the second time I added a little less than 1 cup of raisins and upped the cinnamon to about 2 tsp, added about a tsp of cloves, it was delicious! I make a Pecan Praline Sauce and pour it over each piece while both are still's soooo yummie! or a simple sprinkling of powdered sugar. It's moist, delish and very easy to make. This cake can and will also stand alone, no problem!!!

I made this for a church breakfast. I did not care for it. I think it maybe the nutmeg. It had a strange taste and the apples tasted like raisins. I did use splenda sugar blend. Maybe that's why it tasted strange. I want to try it again using sugar and eliminating the nutmeg

You can substitute brown sugar instead of white granulated sugar or splenda. This will be much healthier, and enjoyed by everyone.

Apples and cinnamon always go good together and since I love all kinds of nuts the pecans really made it perfect. Plan to make it again and if I don't have pecans will try it with another kind of nut.
