Best Mistake I Ever Made

The first time I tried making these, I doubled the recipe, and the brownies were heaven! Dense, fudgy, rich - the works. Then I made a single batch a few weeks later and was so disappointed - they came out much more dry and ordinary-tasting. I double-checked the recipe and suddenly realized what I'd done: I'd forgotten to double the eggs when I originally doubled the recipe! So last weekend I made another double recipe with only 3 eggs, and voila - they were as wonderful as they'd been the first time! The moral of the story: If you're making a single batch, try using only 2 eggs, and if you're making a double, DON'T double the eggs.
