This is a quick and easy recipe to make when you need something quick and easy! The cheesecake isn't too sweet to combat with the taste of the butterscotch. The walnuts add a nice touch.

I have made these numerous times through the years; lost the recipe and now I've found it again here! They are absolutely delicious; a nice change from bars that tend to be too sweet. These are just right. Always a big hit when I bring them along to parties. Super flavor, wonderful texture, simple to make! I store them in the refigerator.

I went by the book here... except one small substitution: I used 2 teaspoons vanilla extract instead of lemon juice. And the bars turned out PERFECT!! My husband ate nearly the whole batch in one day... thank God he has a high metabolism!
