Pumpkin Corn Muffins

Description

Nutritious pumpkin perks up simple corn bread muffins for a breakfast, lunch or for a dinner treat. Try them with a spicy chili or they are great as a snack too!

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 cup yellow corn meal
  • 1/3 cup granulated sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/4 cups LIBBY'S® 100% Pure Pumpkin
  • 1/3 cup NESTLÉ® CARNATION® Evaporated Milk
  • 1/4 cup vegetable oil
  • 1 can (11 oz.) whole-kernel corn, drained (optional)

Directions

PREHEAT oven to 375° F. Grease or paper-line 18 muffin cups.

COMBINE flour, cornmeal, sugar, baking powder and salt in large bowl. Beat eggs, pumpkin, evaporated milk, vegetable oil and corn in medium bowl until combined. Add to flour mixture; mix thoroughly. Spoon batter into prepared muffin cups.

BAKE for 25 to 30 minutes or until wooden pick inserted in center comes out clean. Serve warm.

WHEN I FIRST SAW THIS RECEIPE, I WASN'T SURE IF I WAS FOND OF THE NAME, BUT U KNOW WHAT THEY SAY, "DON'T JUDGE A BOOK BY ITS COVER." I DECIDED TO TRY THEM AND THEY WERE ACTUALLY PRETTY GOOD. SOMETHING SEEMED TO BE MISSING, BUT WHEN I MAKE THEM AGAIN, I WILL BE SURE TO EXPERIMENT A LITTLE.

I served these muffins with spicy black bean soup and they were a great combination. My husband said they weren't sweet enough, my 11 year old was suspicious of the whole corn kernels and barely picked at his, but my toddler and I gobbled them up with just a little bit of butter. They have become a daily snack for the two of us.

These muffins were alright but the recipe seemed to lack something. I plan on making them again but adding a little more sugar and spices. Maybe I'll try honey to see if that helps. Family looved them. Personally I prefer my corn muffins and my pumpkin separate.

I found these muffins to be not sweet enough. I also felt that they had a bit of a grainy texture from the corn meal. The pumpkin flavor was very mild. I would add more sugar to this recipe to bring out the pumpkin flavor.

THE CORN MEAL AND PUMKIN COMBINATIONATION IS VERY GOOD. i ALSO ADDED MORE SUGAR AND A DASH OF CARDAMON, NUTMEG AMD CINNAMON. MADE INTO CORN BREAD AND TOPPED WITH HONEY AND JALAPENO SAUCE.
