Puffy Baked Apple Pancake

Description

Baked apple pancakes are a special treat for a festive brunch. Try these delicate pancakes sprinkled with a little powdered sugar and frosty glasses of orange juice.

Ingredients

  • Nonstick cooking spray
  • 1/2 cup NESTLÉ® CARNATION® Evaporated Milk
  • 1/3 cup all-purpose baking mix
  • 2 tablespoons granulated sugar, divided
  • 3 large eggs, separated
  • 2 tablespoons orange juice
  • 1/4 teaspoon ground cinnamon
  • 1 medium apple, cored, quartered, cut into thin slices
  • 1 tablespoon cinnamon-sugar

Directions

PREHEAT oven to 375° F. Spray 10-inch ovenproof skillet lightly with nonstick cooking spray. Place in oven for 10 minutes.

PLACE evaporated milk, baking mix, 1 tablespoon sugar, egg yolks, orange juice and cinnamon in blender; blend until smooth. Beat egg whites in large mixer bowl until soft peaks form; gradually add remaining sugar. Beat until stiff peaks form. Fold milk mixture into egg whites.

POUR batter into hot skillet. Gently push each apple slice about 1/2 inch into batter, peel side up, to form a spoke-like pattern around batter. Sprinkle with cinnamon-sugar.

BAKE for 10 to 15 minutes or until set. Serve immediately.

This recipe is super simple! I tweaked it by adding pureed spiced(clove)pear to the egg mixture and then placing the apples across the surface.Bake as directed. It is good hot,but serve cold & it is divine!!!!

Good, but missing something

My husband & I enjoyed this, but to me it tasted too "eggy". Perhaps there is a spice that could be added. Probably will make it again as my husband didn't seem to notice the "eggy" taste as I did.

This was so wonderful,everyone loved it.I also peeled my apples,but I drizzled some Vermont Maple Syrup over the top and it was just great tasting.I will make this over and over again it was so easy and quick.

This was so easy to make and very apple taste.I make this for my family for breakfast and they just love this.They put cool whip on top of it and they said it was good.They want me to make this every other day for them.I definatey will be making this again.

Very good! Being a diabetic I used Splenda instead of sugar to cut down on the carbs. Will definitely make this again.

Oh my goodness, what a nice surprise. This is absolutely delicious. It kind of has a bread pudding type texture. It is good with a little syrup or just a bit of butter. The only complaint that I had from my kids is that I needed to make more next time! ;)
