Pumpkin Pancakes

Wake up to spicy Pumpkin Pancakes hot from the griddle! Serve with Pumpkin Maple Sauce for a special breakfast.


  • 2 cups all-purpose flour
  • 2 tablespoons packed brown sugar
  • 1 tablespoon baking powder
  • 1 1/4 teaspoons pumpkin pie spice
  • 1 teaspoon salt
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
  • 1/2 cup LIBBY'S® 100% Pure Pumpkin
  • 1/4 cup water
  • 1 large egg
  • 2 tablespoons vegetable oil
  • Pumpkin Maple Sauce (recipe follows)
  • Chopped nuts (optional)


COMBINE flour, brown sugar, baking powder, pumpkin pie spice and salt in large bowl. Combine evaporated milk, pumpkin, water, egg and 2 tablespoons oil in small bowl; mix well. Add to flour mixture. Stir just until moistened; batter may be lumpy.

HEAT griddle or skillet over medium heat; brush lightly with oil. Pour 1/4 cup batter onto hot griddle; cook until bubbles begin to burst. Turn and continue cooking for 1 to 2 minutes. Repeat with remaining batter. Serve with Pumpkin Maple Sauce and nuts.

1 cup maple syrup, 1 1/4 cups LIBBY'S 100% Pure Pumpkin and 1/4 teaspoon ground cinnamon or pumpkin pie spice in small saucepan until warm.

They're delicious. They taste like autumn. We'll definately make them again. There's nothing like homemade goodness straight from your own kitchen and you know exactly what went into them. The recipe is in my card file.

My family loves this recipe !!! They are a huge hit...Never any leftovers.I replace the egg w/ Egg-Beaters for a better consistancy.Another good way to get this Superfood !!!

These pancakes were very tasty. We had them christmas morning, a very happy crowd. This recipe was easily adaptable to accomodate dairy allergy, I used soya milk in one batch for my son, my husband had both and couldn't tell the difference. My family has asked me to make these pancakes 5 times since christmas. I make the batter the night before so that I can serve them up on weekday mornings, sure beats frozen waffles!

Husband loves pumpkin & pancakes

My husband followed the recipe and made his own pumpkin pancakes. He loved the flavor, but felt the batter was a bit thick. The next time he makes a batch, he's planning to make a thinner batter. As for the pumpkin maple sauce, that didn't go over as well. He thought there was something missing in terms of flavor notes -- sweetness level was ok, but the whole flavor wasn't blossoming right. In general, good pancakes, not so good sauce. However, my husband mixed peanut butter with maple syrup and put that on his pumpkin pancakes --- to him, that was a home run.

I love anything that has pumpkin in it, these were a great treat for breakfast or as a snack. Just reheat in the toaster and they are great.
