Description

Don't wait for the holidays to indulge in this simple but elegant and delicious Pumpkin Orange Poppy Seed Cake. Moist and with just the right touch of citrus, this pumpkin creation studded with poppy seeds is as pretty as it is tasty.

Ingredients

  • 1 pkg. (18.25 oz.) yellow cake mix
  • 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
  • 3 large eggs
  • 2/3 cup orange juice
  • 1/4 cup poppy seeds
  • GLAZE (recipe below)

Directions

PREHEAT oven to 350° F. Grease and flour 12-cup Bundt pan.

COMBINE cake mix, pumpkin, eggs and orange juice in large mixer bowl. Beat on low speed until moistened. Beat on medium speed for 2 minutes. Add poppy seeds; mix until blended. Pour into prepared Bundt pan.

BAKE for 35 to 40 minutes or until wooden pick inserted in cake comes out clean. Cool in pan on wire rack for 10 minutes; remove to wire rack to cool completely. Drizzle with Glaze.

FOR GLAZE
COMBINE
1 1/2 cups sifted powdered sugar and 2 to 3 tablespoons orange juice in small bowl; stir until smooth.

I finally have gotten around to making this cake and it won't be the last time. It was delish and moist. I did add orange zest to the glaze and it just added to the whole cake.

I made this cake for New Year's dinner. I found the flavors an interesting combination. Took the rest of the cake to work; co-workers went nuts over it! I used the Butter Recipe cake mix instead of the yellow cake mix; makes a dense, moist cake.

It was easy to make and very moist. I couldn't taste the pumpkin or the orange very well as they just seemed to blend together to form a different taste. I think I might try a spice cake mix or an orange cake mix because it needed something more. I also made a layer cake and frosted it with a cream cheese icing.

I read the reviews before i bake this cake. I took the adivse from the review and used orange cake mix and 2tsp poppy seed (excellent advise). But I do agree with the reviews, this cake would taste alot better making from scratch. It also need pumpkin spice to bring out the taste of the pumpkin.The cake can do without the icing( sweet enough). Overall, it was average.

Easy, delicious and great tasting! I substtuted 1/2 cup apple juice and 1/4 cup rum. Yum! Yum!

The cake was very moist from the pumpkin, but no one tasted pumpkin. It was masked by the orange flavor. It was a tasty orange cake but the addition of the pumpkin really didn't seem necessary. I think if I try this recipe again I will add some pumpkin spice to bring the pumpkin flavor out.

This was incredibly simple and quick. I did it without the poppy seeds (didn't have any on hand) and also reduced the fat by substituting 2 of the eggs for 3 egg whites. Nothing about it tasted low-fat.
