I have an entire folder of pumpkin recipes because I LOVE anything pumpkin. Well, time flew and the holidays passed me by. I decided that I didn't need a holiday to make this 'pumpkin pudding'!! I made it this past week and I will have to make it more often. I usually share what I make with my neighbors. None of this made it out the door! It was so good that my boyfriend and I ate it! It is so smooth. It was a good thing that I didn't tell anyone I made it.

I love almost anything Pumpkin! I tried this and was pleasantly surprised. I made it again for a friend but added a few chocolate shavings to the top and a bit of vanilla flavoring to the whip cream.

My sister served this during thanksgiving proclaiming that it was pumpkin mousse. And imagine my surprise when my first bite was of a creamy pumpkin pudding.
