This quick pumpkin dessert is creamy, smooth and so satisfying! All that is needed is instant vanilla pudding and pie mix, Libby's 100% Pure Pumpkin, Carnation Evaporated Milk and pumpkin pie spice.

Ingredients

1 pkg. (5 1/10 oz.) vanilla instant pudding and pie filling mix
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Lowfat 2% Milk
1 can (15 oz) LIBBY'S® 100% Pure Pumpkin
1 teaspoon pumpkin pie spice
Fat free whipped topping (optional)

Directions

BEAT pudding mix and evaporated milk according to package directions in large bowl; refrigerate for 5 minutes. Add pumpkin and pumpkin pie spice; mix well. Spoon into dessert dishes. Refrigerate for 10 minutes or until ready to serve. Top with whipped topping, if desired.

This is a great recipe that is quick, easy and easily adapted to a sugar free recipe. I used sugar free pudding mix and light topping. Was great!

I have an entire folder of pumpkin recipes because I LOVE anything pumpkin. Well, time flew and the holidays passed me by. I decided that I didn't need a holiday to make this 'pumpkin pudding'!! I made it this past week and I will have to make it more often. I usually share what I make with my neighbors. None of this made it out the door! It was so good that my boyfriend and I ate it! It is so smooth. It was a good thing that I didn't tell anyone I made it.

I love almost anything Pumpkin! I tried this and was pleasantly surprised. I made it again for a friend but added a few chocolate shavings to the top and a bit of vanilla flavoring to the whip cream.

My sister served this during thanksgiving proclaiming that it was pumpkin mousse. And imagine my surprise when my first bite was of a creamy pumpkin pudding. For those of you, like me who like a mousse like finish once in a while, try folding your container of low fat whipped topping after it is all put together, at the end and after it has been in the fridge a bit to cool back down.
