As it is hot and humid in Texas, I was looking for a dessert that is flavorful, short on prep time and makes you feel refreshed. This Tropical Sunshine cake
completely hit the spot! Everyone raved how moist it was. Toasted coconut and the pineapple made you feel like on a tropical vacation. Sharing the recipe with all.

I made this at Christmas; even though I did not use the almonds due to a food allergy and no coconut because the store left it out of my order, everyone loved it. I will make this again.
