Try this versatile Hash Brown Casserole as a main or side dish for breakfast or brunch. This recipe calls for bacon, but it is a great recipe for leftover ham. If your family likes spice, try adding in some pepper jack cheese or crushed red pepper flakes.


  • 2 cups (8 oz.) shredded cheddar cheese
  • 3 cartons (4 oz. each) cholesterol-free egg product or 6 large eggs, well beaten
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Fat Free Milk
  • 1 teaspoon salt (optional)
  • 1/2 teaspoon ground black pepper
  • 1 pkg. (30 oz.) frozen shredded hash brown potatoes
  • 1 medium onion, chopped
  • 1 small green bell pepper, chopped
  • 10 slices turkey bacon, cooked and chopped, or 1 cup diced ham


PREHEAT oven to 350° F. Grease 13 x 9-inch baking dish.

COMBINE cheese, egg product, evaporated milk, salt and black pepper in large bowl. Add potatoes, onion, bell pepper and bacon, mix well. Pour mixture into prepared baking dish.

BAKE for 60 to 65 minutes or until set.

This was perfect for our Easter brunch. Super easy for me to make and everyone loved it. Next time, I might try it with broccoli instead and omit the green pepper for wider appeal.

I've been making this casserole for years now. It's the only dish I'm allowed to bring for company events because they love it so much. It's easy and delicious. I've used diced ham and smoked sausage in the recipe before and they both give it a unique flavor.

I made this as part of my son's high school graduation party brunch. We fed 150 people and served this casserole along with fresh fruit and sweet breads. We made only one change to the recipe which was to add chopped ham instead of bacon. It was a huge hit. I ended up sending the recipe in more than a few thank you cards!!

We hosted 8 teenage boys in our home for the weekend, and I needed a breakfast option that would be quick, easy, and affordable. I doubled this recipe, and replaced the bacon with cooked and crumbled turkey sausage. Everyone raved about how good it was, and kept going back for 2nds, and 3rds. To save time, I even made the casserole the night before and stored it covered in the fridge till the morning. Then, I added an extra 10 minutes to the cooking time. I will make this recipe again and again. Thank you for sharing it.

This recipe is great, as my husband loves a hearty breakfast, but so many things contain bacon - and he just doesn't like the fatty (delicious - in my opinion) food. However, turkey bacon is a favorite and it brings great flavor to this recipe. Thanks once again!
