Banana Nut Bread

Description

Banana Nut Bread is a great way to start the morning. Save your ripe bananas for this recipe by peeling and storing them in the freezer.

Ingredients

  • 4 cups all-purpose flour
  • 1 1/4 cups NESTLÉ® CARNATION® Instant Nonfat Dry Milk
  • 4 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 4 large eggs
  • 3 1/2 cups (about 7 medium) mashed very ripe bananas
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 cup chopped walnuts

Directions

PREHEAT oven to 350° F. Grease two 9 x 5-inch loaf pans.

COMBINE flour, dry milk, baking powder and cinnamon in medium bowl. Beat eggs, bananas, sugar and oil in large mixer bowl on medium speed. Gradually beat in flour mixture; stir in nuts. Spoon into prepared pans.

BAKE for 60 to 65 minutes or until wooden pick inserted in centers comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.

I absolutely loved it! It stayed moist because I kept it covered. Though there was a lot of extra batter at the end, I had enough to fill another pan!

I have had better. The cinnamon was little overpowering. Not as moist as I like. I will keep using my usual recipe I think.

I made this today and it is very good , and I would make it again ,But cut the recipe in Half as it is a lot of bread.

I made this bread but I did end up changing some of it and I don't think that it was for the best. I used olive oil and I halved the recipe. It was kind of crispy on the outside and not cooked too well on the very middle top. But what did cook well was delicious.

I made this recipe for the first time yesterday, it was a lot easier than I had thought it would be, my 4 year old has eaten nothing else since I made it, I think I'll have to make it again soon!

I made this for my kids and to get my son to eat bananas at all, I add chocolate chips to the recipe instead of nuts and then he will actually eat it. But it is good either way. Thank you

loaf fell apart

I tried this recipe but was not impressed. After taking the loaf out of the pans, the bread fell apart. The outside was very dark but the middle was undercooked.
