Description

Make this Easy Pumpkin Cream Pie in advance and garnish with ruby red raspberries and whipped cream right before serving for an eye-catching presentation.

Ingredients

  • 1 9-inch (6 oz.) prepared graham cracker crust
  • 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
  • 1 pkg. (5.1 oz.) vanilla instant pudding and pie filling mix
  • 1 cup NESTLÉ® CARNATION® Evaporated Milk
  • 1 teaspoon pumpkin pie spice
  • 2 cups frozen whipped topping, thawed, divided
  • 1 cup fresh raspberries (optional)

Directions

COMBINE pumpkin, pudding mix, evaporated milk and pumpkin pie spice in large mixer bowl; beat for 1 minute or until blended. Fold in 1 1/2 cups whipped topping. Spoon into crust. Freeze for at least 4 hours or until firm. Let stand in refrigerator for 1 hour before serving. Garnish with remaining whipped topping and raspberries, if desired. Serve immediately.

Not much can make this recipe better. However, I have morphed my version into a pudding! My family loves it and asks for it year after year! Make the same recipe, just add a little more cool whip, a 29 oz can of Libby's pure pumpkin, a tad more pumpkin pie spice to taste and present in a bowl minus the crust. Crumble graham cracker crust and mix in just before serving and top with cool whip! The crowd loves it and the graham cracker crust in the pudding adds an extra crunch to the texture. Tastes great!

I found this recipe on the back of the label a few years ago. It is by far my favorite pumpkin recipe. Being a single mother of 2 it makes making Christmas and thanksgiving dinners so much easier.

I made this pie for my family using the sugar free/fat free vannila pudding mix, lite cool whip, and added extra pumpkin pie spice for a stronger flavor. They loved it! It was also very simple to make. Thanks for an awesome recipe.

I made this pie for one of my Thanksgiving desserts. It was delicious, but my husband liked it better the next day after it had completely thawed because I did not put it back in the freezer. I think it could just be refrigerated and not frozen at all.

Nice Thanksgiving Addition

This recipe was an easy addition for the Thanksgiving holiday meal. I made it with sugar free vanilla pudding which was a real help for my Mom, who is diabetic. I used sugar-free whipped topping as the garnish. It is a great recipe to make ahead of time and the fact that is a no-bake recipe is also a real plus. Nice recipe.
