Pumpkin-Orange Pancakes

With amazing flavors in each bite, these moist and fluffy Pumpkin-Orange Pancakes make a great back-to-school breakfast treat.


  • 2 cups all-purpose baking mix (such as Bisquick)
  • 1 cup fat free milk
  • 1 cup LIBBY'S® 100% Pure Pumpkin
  • 2 large eggs
  • 1 teaspoon grated orange peel
  • Maple syrup


COMBINE baking mix, milk, pumpkin, eggs and orange peel in large bowl; stir until blended.

GREASE griddle or large, nonstick skillet. Heat over medium-high heat. Pour about 1/4 cup pancake batter onto hot griddle for each pancake; cook for 2 to 3 minutes on each side or until golden. Repeat with remaining batter. Serve with syrup.

Add a little cinnamon, nutmeg and pecans and turn this into a wonderful meal. Great flavor and use of pumpkin and the orange adds just the right zing - yummy!

Pancakes have long been a family favorite. These are a wonderful change of pace from traditional ones. The orange zest adds zip. I sometimes add the zest to the syrup too. Supurb!

I made the pancakes for my family. My son especially loves pumpkin anything. The consistency was very good, but nobody was a big fan of the slight "orange". I think I will skip the orange next time and make just plain pumpkin. I am sure they will be delicious!

It's easy to make this light flavored pancakes. I liked the addition of the orange rind in the batter. It's a pleasant variation to the normal spice flavors normally associated with pumpkin.

I wanted to try these and was very happy with my choice to do so. I did however leave out the orange and added a pinch of cinnamon and 2 tablespoons dark brown sugar. So very good and sweet My kids loved them, so did hubby. You don't have to use syrup we used a little powdered sugar and we also made these for dessert with an apple pie filling on top. REAL TREAT !! You should try it.

This recipe is great. My kids loved it. It was a great way to sneak veggies into their diet. I added a teaspoon of cinnamon and a pinch of nutmeg to the recipe to taste more like pumpkin pie.
