Gift-Giving Pumpkin Cranberry Breads

Gift-Giving Pumpkin Cranberry Breads are easy to make and will be loved by all. Surprise your friends and family with this wonderful gift from your very own kitchen.


  • 6 cups all-purpose flour
  • 3 tablespoons plus 1 teaspoon pumpkin pie spice
  • 1 tablespoon plus 1 teaspoon baking soda
  • 1 tablespoon salt
  • 6 cups granulated sugar
  • 1 can (29 oz.) LIBBY'S® 100% Pure Pumpkin
  • 8 large eggs
  • 2 cups vegetable oil
  • 1 cup orange juice or water
  • 2 cups sweetened dried, fresh or frozen cranberries


PREHEAT oven to 350° F. Grease and flour four 9 x 5-inch disposable loaf pans.

COMBINE flour, pumpkin pie spice, baking soda and salt in extra large bowl. Combine sugar, pumpkin, eggs, oil and juice in large bowl with wire whisk; mix until just blended. Add pumpkin mixture to flour mixture; stir until just moistened. Fold in cranberries. Spoon 4 cups of batter in each prepared loaf pan.

BAKE for 75 to 80 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks. Once completely cooled, wrap pans with colored plastic wrap. Decorate with ribbon.

I've been baking this bread to give as gifts for the past couple years now and have yet to see it not turn out perfectly. It's moist and flavorful and freezes beautifully too.

This is a perennial favorite with family and friends. EXCELLENT hostess gift that most everyone can enjoy. I use fresh cranberries doubling the quantity. I blanch the additional half of the cranberries and divide for each loaf - sprinkle each portion on top of loaf before baking (I go right down the center of the loaf) for a beautiful presentation. I always get questions about where I bought the "fancy" bread! Get ready for oodles of compliments and perhaps a few orders from your not-so-baking-friendly friends.

We loved the pumpkin cranberry bread. To try and make an even healthier version, I substituted half of the flour with wheat flour, and used applesauce instead of oil. Turned out to be deliciously moist and tasty.

This is a phenomenal and simple recipe (my 9 year old put it together)! Even my picky kids LOVED it. It was so delicious and moist and came out perfect, even though I could manage to wreck and destroy any bakery recipe you put in front of me. Totally Idiot Proof! We've tried others that were too tart or turned out like dry bricks, but this is just the best and we will be making plenty of this to give to family and friends for holiday gifts.

I have made the same pumpkin bread for over 30 years. Then I decided to try this 'Pumpkin Cranberry' recipe. It is the BEST pumpkin bread recipe ever. I use fresh or frozen cranberries and always make a double recipe. I give mini loaves as gifts and everyone always wants the recipe.
