Sensibly Delicious Pumpkin Roll

Description

Try this "sensibly delicious" version of our pumpkin roll. Sprinkle with powdered sugar before serving, if desired.

Ingredients

  • CAKE
  • 1/4 cup powdered sugar (to sprinkle on towel)
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup SPLENDA® Sugar Blend for Baking
  • 2/3 cup LIBBY'S® 100% Pure Pumpkin
  • 1 cup walnuts, chopped (optional)
  • FILLING
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1 cup sifted powdered sugar
  • 6 tablespoons butter or margarine, softened
  • 1 teaspoon vanilla extract
  • Powdered sugar (optional for decoration)

Directions

FOR CAKE:
PREHEAT
oven to 375° F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.

COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and SPLENDA® Sugar Blend for Baking in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.

BAKE for 13 to 15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

FOR FILLING:
BEAT
cream cheese, 1 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.

*Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick.

I made this for Thanksgiving and at first, I didn't think it would turn out, but it turned out great and was rather a hit. I would seriously make it again. Just keep patient when making this--it'll turn out.

Easy Family Favorite

My sister-in-law originally made this. She often brings it to family gatherings, especially around the holidays. This last Christmas my daughter made it for her in-laws and they absolutely loved it. This pumpkin roll has become a holiday staple for both our families.

Sticky Problem

I have made this recipe many times for family, friends and parent helpers-all with rave reviews! My only problem was keeping the roll from sticking to the towel while cooling. My recipe calls for dusting the cloth with granulated sugar. I can't wait to use your suggestion for using the powdered sugar instead. My two grown sons love it so much, I have occasionally caught them each with an entire roll in their hand eating it like a submarine sandwich!

I made this for the first time for Thanksgiving. My family loved it. It was much less worked than I anticipated. My only suggestion is: do not wait as long as I have to try any type of jelly roll. Followed the direction and it was "a piece of cake". Enjoy

Pumpkin Roll

My 20 yr old son (who doesn't know a thing about cooking)made this pumpkin roll after seeing the picture on the pumpkin can. He printed the recipe off the Libby's site. He did an excellent job and commented on how easy it was because it was listed as intermediate. It was delicious. He made another one for Thanksgiving dinner.

Libby's Pumpkin Roll has been a holiday tradition at my home each year since Thanksgiving of 1984. This is a winner each year and has come to be an expected dessert to be served.
