Description

Butterscotch Scotchies make a great dessert bar that is perfect for all occasions. This one is one of our "desert safe" recipes to send to your loved one overseas. This recipe has been tested in our kitchen and does meet Middle East guidelines, as well as U.S. Postal Service mailing regulations.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup butter-flavored vegetable shortening
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 1 1/2 tablespoons grated orange peel, (1 medium orange)
  • 2 tablespoons water
  • 3 cups quick or old-fashioned oats
  • 1 2/3 cups (11-oz. pkg.) NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels

Directions

PREHEAT oven to 375º F. Grease 15 x 10-inch jelly-roll pan.

COMBINE flour, baking soda, salt and cinnamon in small bowl. Beat shortening, sugar, eggs and orange peel in large mixer bowl until creamy. Gradually beat in flour mixture and water. Stir in oats and morsels. Spread batter into prepared baking pan.

BAKE for 18 to 22 minutes or until golden brown. Cool completely in pan on wire rack. Cut into bars.

I will make these today for a dear friend of my son's (my friend, too) who is now in the Army. They sound great! Will make 2 other kinds of cookies so he has plenty to share.

Orange peel?

We love the regular recipe Oatmeal Scotchies, but found the orange peel in this revision too distracting. Haven't heard from my son in Iraq yet to see what he thought. Maybe the orange peel preserves the cookies better for shipping?

When my husband was in Iraq last year, I sent these cookies for Christmas. I made about five batches. His coworkers loved them. I individually wrapped each cookie in plastic wrap, then packed them in plastic tubs. My husband said that nothing was broken in transit.

I made these bars for my husband's unit when they deployed to afghanistan. After 2 weeks in country, my husband said that any package he receives is eyed closely with the hopes of finding more butterscotch scotchies! I will be sending more soon:)

We started making these a couple years ago, along with the other favorite christmas cookies. soon after, the kids started requesting them on a weekly basis. now the grand kids do the same!! they are soooo good!!!
