I recently found out that I need to stay away from wheat flour. I felt like I had lost my "best friend" - little did I know how much better I would feel without it. I have been on a quest to bring back a lot of the foods that I miss so much, and pumpkin pie is at the top of the list. Very simple, put the filling in a pie plate without the crust - I did very lightly grease the plate with a solid shortening. Came out great - my whole family loved it so much that they all said not to bother making it with the crust anymore. Still working on my list - but I can now cross one food off.

Making pumpkin soup is like making a vegetable soup. You add two bunches to celery,, two cloves of garlic, you can add corn as well. Add water to think pumpkin, but not too much. Add salt and pepper and a dollop of sour cream on top when serving. Very hearty and oh so good.

Instead of adding pumpkin to ready made pasta sauce you can make a sauce using a 15 oz. can of pumpkin ,1/4 cup of peanut butter, 1/4 cup low sodium soy sauce, 3 cloves garlic, 1/8 tsp. ginger, pinch of red chili flakes, and 3 ladles of pasta water for a wonderful pasta sauce.

Plain and simply delicious: Add a couple of tablespoons of pumpkin and a sprinkle of cinnamon to vanilla yogurt. For even lower calories and sugar, use plain yogurt and add a few drops of vanilla extract.
