Cornbread people and what?

August 6,2009 An old favorite recipe for supper.

I had put on a pot of pinto beans in the crock pot this morning for our supper meal. I was wondering what to make with them, cornbread or tortillas? Cornbread sounds good to me. I then remembered a recipe I had not made in quite a while. It is a hamburger upside-down cornbread. A WHAT YOU SAID? Yes an upside-down cornbread and I am going to share my recipe with ya'll. It is delicious and not hard to make. You can make as little or as much as you want depending on the amount of meat and cornbread batter you cook. We always cook a lot at one time. Take a large skillet and add your hamburger (can also use sausage) to brown add comino, salt, pepper,garlic and onions and bell peppers if you like them (we try different things but this is the basics) Mix well and when meat is brown drain off most of the grease. Now add 2 Tablespoons of flour and stir it up, then add 2 cans salsa (or tomatoe sauce) add colby-jack cheese, stir well, Pour into a large UNGREASED pan, smoothing out to the sides of the pan. Mix up your cornbread batter (you can use mix if in hurry) and pour on top of meat mixture, put into hot oven and cook until top is browned. Take out and let cool 5 minutes, go around sides with a knife or spatula and then put your platter on top of the cornbread pan and flip the cornbread onto the platter. (make sure the size is right) Top with remaining colby-jack cheese. We also make cornbread people to serve with this meal. And a cast iron skillet with thin crispy cornbread to go with the pinto beans. Serve and enjoy. You can add your favorite garnishes if desired. That should say spices in that last entry. And I too like the clouds which show the hands of God. When I feel overwhelmed by a situation I look at that picture to remind me that Jesus is always there in the midst of whatever storm we are in. Jesus will keep us safe if we are obedient and listen to what His word says. We will go through trials but we will overcome them in Jesus name. Thanks for reading and have a good day, Donna.

The spice comino is cumin, it is the spanish version, and salsa is tomatoe sauce with onions and chiles and tomatoes and soices already in it..

We like a similar version of this, only we add plenty of sweet corn to the meat mixture. Thanks for reminding me about this great recipe. I find so many good recipes and ideas on this site that I tend to focus on new ideas and forget all about my old favotites. Thanks for sharing.

Instead of the Gingerbread pan in the cabinet for 10 months out of the year. Why not, make Cornbread in the same pan. Great thought!!! Glad you pulled the fat off the hamburger meat - not healthy- Use for bird seed mix..

Brown the meat in a large skillet, adding spices

Pour off excess grease

add flour and mix well

add 2 cans of salsa and mix well

add cheese and mix well

Pour into large ungreased pan and smooth to edges

add your cornbread batter on top of meat mixture

Put in oven to bake, use extra batter as desired

cornbread people,crispy cast iron corn bread too

Take out of oven, set 5 min. and go around sides

flip onto a platter, top with remaining cheese

Serve with pinto beans, extra slice of cornbread
