Everyone knows NJ/NY water is the best for baking.  Recently, I uncovered a pretty incredible source for amazing crumb cakes.  Check out http://www.crumbcakecreations.com. They offer all different crumb cakes like pumpkin, chocolate, jam filled, and of course the basic traditional cake.  Not sure how their get their crumbs so crispy and cake so moist! Yum!  A must have!

I have made a cinnamon crumb cake in the past, but haven't ventured beyond that recipe. I too would love some recipes!

I was given a recipe for Crumb Cake.  The woman that gave it to me was from New York and had searched for a long time to find this particular recipe and she says it is exactly like "home".
Ultimate Crumb Cake
Crumb Topping
1/3 cup granulated sugar
1/3 cup dark brown sugar
3/4 tsp cinnamon
1/8 tsp salt
1 Stick butter, melted and still warm
1 3/4 Cup cake flour

Cake
1 1/4 Cup cake flour
1/2 Cup granulated sugar
1/4 tsp baking soda
1/4 tsp salt
6 Tb butter cut into 6 pieces but still cool
1 large egg plus 1 large yolk
1/3 Cup buttermilk

For the topping:
Whisk sugars, cinnamon, salt and butter in a medium bowl to combine.  Add flour and stir with spoon or spatula until mixture resembles a thick dough.  Set aside to cool at room temperature., 10 to 15 minutes.

For the cake:
Adjust oven rack to upper- middle position and heat oven to 325 degrees F.
Line pan with parchment paper or foil. Pan should be 8 inch square.  Recipe can be doubled for a 13X9 pan, increase bake time to 45 minutes.
Grease pan and paper, allow paper to hang over edge of pan on 2 sides.
In bowl of stand mixer fitted with paddle attachment, mix flour, sugar, baking soda and salt on low to combine.  With mixer running on low speed, add butter one piece at a time; continue to beat until mixture resembles moist crumbs, with no visible butter remaining, 1 to 2 minutes.  Add egg, egg yolk, vanilla, buttermilk; beat on medium high until light and fluffy, about 1 minute, scrape once if necessary.
Transfer batter to pan, spread into an even layer.
Break apart crumb topping into large pea size pieces.  Sprinkle on in an even layer starting with edges and working to the center. 
Bake until crumbs are golden and wooden skewer inserted into center of cake comes out clean. About 35 to 40 minutes.
Cool on wire rack at least 30 minutes. Remove from pan by lifting the parchment out.  Dust with confectioners sugar just before serving.

Note do not use all purpose flour for this the result will be a dry tough cake.
If you do not have buttermilk an equal amount of plain yogurt will work.

Thanks for sharing the recipe Nikki.  Also thanks for the note about not using regular flour.  That's all I have in the house right now lol.

Look at my post dated 4/8/2012
I posted a recipe given to me by a very good friend.  I think the recipe came from a Cooks Illustrated or Cooks Country Magazine so you know it will work.  (if you use the correct flour)
