I remember my paternal grandmother making iver dumplings for chicken soup but can't find a recipe anywhere. She came to the USA from Poland so a Polish cookbook (I have several) might help. HELP!!

I have a recipe that my mom makes for liver dumplings made with farina. Here it is:
Beat one egg, add a dash of salt and one teaspoon vegetable oil. Cut up two chicken livers into very small pieces (can use the blade of knife to shave the liver) add to beaten egg. Add just enough farina to make it thick. Using a teaspoon dipped in hot water, take a small amount of the farina mix and put in boiling soup. Continue until all the farina is used. If the farina mix gets too thick, add a little water and mix. This makes a lot of dumplings.

Oops, forgot something! Depending on how soft or how large you want the dumplings will determine how long to cook them. I usually just test one by cutting it in half after about 6 minutes.

OMG!!! I haven't eaten chicken soup with liver dumplings for about thirty years. My Dad used to make them for us and thanks H.M. for the recipe. He's not with us anymore and never wrote down recipes..had them all in his head.

Wish I could help you, having 3 sets of great grandparents coming from Poland. I asked my Mom, she is 100% Polish, but she has no recollection of liver dumplings, only plain regular dumplings.

Farina is a cereal and is commonly used for breakfast but is in no way resembles oatmeal.  Cream of wheat would be much more like it.  Some people refer to cream of wheat ( a brand name) as farina (the generic equivilent).  It is made from wheat and is in the form of fine granules.  It would take up the moisture in the mixture and thicken it.  Hope this helps.
