My brother in law was recently diagnosed with diabetes, and is now on a very strict diet. He is quite large and loves to eat, so this is very difficult for him. My sister also has health problems, therefore does not cook much at home. They ate out a lot. Now she is trying to help him get his diabetes under control and loose some weight. She has called me several times asking for good recipes too cook up that are not too challenging for her. It is great to share some of my cooking knowledge with her. I sure hope it helps them both.

That is great that you can help them.  I am sure it will make their drastic changes easier.

If your sister has access to a computer, there are a number of sites that would offer menu ideas and even recipes.  She's fortunate to have you to help her out with recipes, too.

While dieting I found that boosting flavors with spices helps.  Fat helps to carry flavor so by reducing fat in some cases you loose some of the flavor so increase the spices a bit and sometimes a squeeze of lemon will help add a freshness to the dish.
This is a great time of year to "cut back" a lot of fresh fruits and vegetables make lighter eating easier.

Also try doing a "make over" on some of their favorite dishes.  I have found that a chicken dish made for 2 people does not need 2 chicken breast.  Increase the vegetables and other ingredients and cut the chicken into strips or if the chicken has to be a whole breast cut it in half then pound it out a bit. Most of the problems we all have is portion control (or lack of) so measure portions out.  If he is still hungry add extra portions of vegetables.  A lot fewer calories than the  meat and after a while the extra portions of vegetables will be cut back.
It takes a while but it is worth it.  As much as I love chocolate and all the goodies I would not put back my 120 pounds to be able to eat more of the stuff I love, I love my health and my family much more.

My father is diabetic and has a difficult time some days watching what he eats, but my mom watches what she cooks and doesn't buy stuff that he can't have.  It was tough at first, but he is doing pretty well at it now.

I hope you brother in law gets his diabetes under control.  It sounds like he is on his way though.

I just heard on the news the other day that more and more people that undergo the bariatric surgery end up going off insulin within a few days.  There is such evidence that they are drastically decreasing the BMI standards for Diabetics so they can have the surgery just to help control the diabetes.
I know it is a radical undertaking but maybe it is something he could talk to his doctor about.

Don' t tempt this guy with foods he shouldn't have.  Encourage and praise him when he does well.  A change in life style is a difficult challenge.

There is so much info out there to guide your sister in law w/only the click of her mouse.  This also might not be a bad time for him to start taking some responsiblity for his own health and learn some diet tips and easy ways to cut fat and sugar from his diet.  They are lucky to have you in their lives!
