For as long as I can remember, my Mom makes her traditional, Jamaican Fruit Cake every Christmas. It's nothing like the brick shaped/hard type that they sell here, in the U.S. My job was to help with the mixing. First we creamed the Butter and sugar and then added in other ingredients and mixed and mixed until it was all done. I loved 'licking' the bowl and spoon as my reward for helping. I can hear the phone and the doorbell as family and friends call and come by for their share! It was and still is a hot commodity at Christmas time! Love you, Mom!
