Well a new day has dawned, I have had a couple of cups of coffee and survived yesterday. I will try this one more time.

As I said it was our daughter Pats birthday and we had been trying to plan a surprize dinner for her. LeeAnn called to talk to Salvador (Pats husband) concerning the dinner. Pat ask why she wanted to talk to him, LeeAnn said what do I tell her? She then proceeded to remind her about how they had been planning to enlarge the upstairs area of our house. Pat said that he would talk to David about it later. Is the greeneyed monster (jealousy) trying to show up? When LeeAnn hung up the phone she said Now what do we do? Wait till David gets in and have him call. That will be too late for what I need, mom. I know LeeAnn said I am just going to call sister Pat and tell her she spoiled everything. I laughed at the thought and the next thing I knew LeeAnn had her back on the phone. Okay she said, You just spoiled everything, I was trying to talk to Salvador about a surprize party for you but no you would not let me talk to him, Oh, here I will give him the phone now. Yea, said LeeAnn now you want to give him the phone because you know it is about your birthday. The girls were both laughing at each other as Pat handed the phone to Salvador. So much for a surprize dinner now.

We went ahead and got the macaroni salad done, the brisket was on the pit and even though it was no longer a surprize we decide we would have the dinner but we would wait until after church services tonight(we start at 6:30 p.m.). No one was going to say anything else to Pat about and just maybe we could kinda surprize her with the after church dinner. We started getting out the cake pans and ingredients to prepare the cakes, LeeAnn was going to do a white cake batter and put a filling inside and then top it with a whipped cream icing and the take strwberries and cut them thinly down longways leaving the bottom still connected. This way they would fan out and be very decorative and whipped cream icing and strawberries are her favorite. I had decided to make a coconut cake with bavarian cream filling inside of it. when Pat takes me to town we always get an eclair to enjoy on the ride home from town(we live 25 miles from the store). LeeAnn went to turn on the oven to start the cakes to baking. Oh, no mom...WE ARE OUT OF BUTANE. (this is the fuel we cook with) What are we going to do? It is too far to go to town and no time to go. I know I am going to ask Pat if I can come up there to make the cakes. There goes the surprize again. LeeAnn heads up the hill with all the cake stuff in a bag just as Vertie (a grandaughter we raised straight from the hospital)comes into the house with her friend, asking what she could do to help. Well I wanted to make spiced eggs because Pat really likes them but we just ran out of butane. Do you think they would cook in tha big electric skillet? It is really deep and would hold a lot of eggs. No, Vertie said mom it wont work. I am just going up to Pats to cook them. I never heard of a surprize dinner being cooked at the birthday persons house. Pat called when Vertie got up there and she said mom any thing you need to make just send it up here, thanks I said hearing the glee in her voice. She must know for sure we are making her birthday dinner. All her favorites being made up there at her own house for her own birthday party dinner. The girls were getting ready to bring everything back to the house, when Pat ask Vertie, Why did you boil 40 eggs? With a smile on her face. Vertie told her I think mom is going to make egg salad for supper. Oh, Pats face just dropped. The girls got here and we quickly started preparing the frostings, LeeAnn began to make the whipped cream for the fillings and frostings. I ask Vertie to hand me the pudding for my filling. She could not find it. All I see is chocolate. (teenage grandkids come over to watch movies and raid the kitchen when we have gone to bed) Well I will just change to a chocolate filling. I took the pudding and added only 3/4 cup of carnation milk to it and began to stir it. By this time the whipping cream was thicken so I ask LeeAnn to put about two cups into my pudding mix bowl. i mixed it up and began to fill the cavities of each layer of cake I had, then start to add icing around the edge to seal the layers together, when I hear LeeAnn's famous cry: Oh no mom I ruined it! What did you do, I thought the whipped cream icing was getting to thick so I added milk and it curddled up on me. Well, I did buy an extra carton just in case we would need it. Oh, great mom as she began all over with her icing. This time it came out perfect. She got a special tip we have to add filling to the center of each cupcake and then she was putting the swirl on top, everything was going fine now. Almost done mom as she went to the refridgerator to get out the two cartons of strawberries we had just purchased and there she goes again with that cry, IS THIS NIGHTMARE EVER GOING TO END, I thought to myself. Now what, Just look athe strawberries, one is half esaten up and the other box is all moldy. Well look at them carefully and see if any can be saved. I was really going to tell the store off about these strawberries! LeeAnn said mom they probably got too hot on the way home and then when we put them in therefridgerator to cool off the sweated and then began to mold. Yea that could be it, 25 miles to dry home and over 100 degrees temperature, yes I guess I will not say anything to the store after all (like I really would any way) LOL LeeAnn found 3 strawberries we could use, but how do you put 3 strawberries onto 24 cupcakes? Some called out and said do you know it is almost time for church? Oh no, (now it was my turn to say it), as we hurried to get ready. We got into church and had a good service. We have a time where anyone can get up and testify about what happened during the week, a praise report, a prayer request or to sing a song or read a scripture. Pat got up after a few others and she said, well today is my birthday (like we did not know) and I am 50 years old. I thank God I have lived this long and I was not always sure I would make it even to 40 years, let alone 50. We clapped but did not say happy birthday or anything about her birthday. I noticed Pat kept looking outside toward the Barbecue pits and I wondered why. When church was over everyone was saluting one another and conversing as we usually do. Still no one said anything to Pat about her birthday. She looked a little sad and said I guess we will be going home now. I could not stand her sad look any longer so I said We have made a "SURPRIZE" Dinner for you. She had a real big smile the. She said she thought we just canceled it since LeeAnn told her she spoiled the surprize. As we went out the door I saw Salvador take off running towards our porch. Now what has happened? He turned and started back towards Pat with a handful of lillies and a big smile. He handed her the lillies and gave her a big kiss ( this is not typical of him to show affection in front of others). Now Pat had a big smoile on her face. (she always says he is not romantic enough) She was looking around and said there is the smoke! I kept looking out the window at church but I did not see any smoke. Now I know why she had kept looking towards the house. We all gathered around the table as food was being brought out. LeeAnn said mom what did yall say to David, he is furious (not his self?) Nothing why what did he say? He said he looks like a fool, everyone itting around and everythings ready except the brisket. When he came back out I told him to grab some sausage and throw them on the pit, they wont take long to cook while we wait on the brisket. Well of all the kids Pat is the one who always takes charge of any situation that arises and she gets up and starts cutting the brisket open to see if it is done. Its done and they served it along with the sausage and beans and everything else. We sit out there with the tiki torches on to keep the bugs away and the security light gave us light even as twilight fell on us. LeeAnn brought out the cakes and Pat loved both of them.

Thanks for your wonderful comments and as the saying goes Come on down, we always have an open door for all. I am adding a part two because I ran out of room and I still have more to tell about the cake decorating and it is just too cute to leave out.
