I had made a wedding cake last year for some folks and was making a small 1st anniversary cake for them to take on a trip this year amongst a lot of other things going on. I ended up baking the cake really late at night and it looked kind of thin and dense compared to what I remembered when it came out of the oven. I figured I would have to make another layer to finish it so it would be okay to fill and frost properly. The next day I realized what happened as I started to make the second layer - I had somehow swapped amounts on things and ended up with only about half of the baking powder and sugar listed for the recipe - no wonder it ended up that way, it was just me being dense! Needless to say I made it the right way this time and it came out great. I still had the "mistake" to deal with. I was at the point of throwing it out, which I hate to do, when I realized I needed something to bring to a summer party that weekend and had nothing. I thought about what I could do with a thin, dense, not too sweet piece of lemon cake and ended up making it into a bunch of lemon petits fours with raspberry/blackberry filling and lemon frosting. I held my breath in case they were not too good, but they turned out to be a huge hit with a bunch of people asking for the recipe! Everyone had a huge laugh when I told them how I had made them. I had been afraid the cake would have been too dry and bland, but with the berry filling and the lemon frosting, they had plenty of flavor and were solid enough to hold together as tiny as I cut them up. I was thrilled and had to go home and write down my mistake before I forgot what I did "wrong" so I could make them again!

great story.i love it one time when i was baking for a special party i also forgot the baking powder.i knew something was wrong just couldnt figure what.cant quit remember exactly what i ended up doing but we all at it.this story really remined me of mine.thaanks i had a nice laugh and remberence

I love it when things work out so well.  You hate to have to throw out something that is not quite right.  But I am sure the birds & squirrels were hoping you would!  LOL
