One egg cake

I used to love to make one egg cakes, they were so easy and I would add different food colorings for different affects. I found out one day that our cat Tiger loved the one egg cakes. He had jumped up and ate a big chunk of the cake. After that I would put the cake on top of refrigerator with no easy access but he found a way. Next came putting it in a big paper bag. Still Tiger got the cake. After that he was giving a piece. No chocolate though. Still miss Tiger to this day.

Here is the recipe Tracie from Joy of Cooking

One-Egg Cake Recipe (Master Recipe)
1/4 Cup Shortening (or butter)
2/3 Cup Sugar
1 Egg
1 Teaspoon Vanilla Flavoring (or real vanilla)
1 1/2 Cups Flour
1/4 Teaspoon Salt
2 Teaspoons Baking Powder
1/2 Cup Milk

Cream shortening and sugar. Add unbeaten egg. Add flavoring. Beat thoroughly. Sift flour, measure, and sift with salt and baking powder. Add alternatively with milk to creamed shortening and sugar. Pour into well-oiled loaf pan. Bake in moderate oven (375 F.) 35 minutes.

Sometime J.F. I have Lighting and Smokey father and son and they are characters. Tiger will always be in my heart and I know he is waiting for his family to join him.

I enjoyed reading your story.  I know how you feel about Tiger.  Our cat also jumped up to the table and ate part of our cake.  She has been gone for almost 7 years and we miss her.

I have a Tiger (his name is Badcat)  ... he loves to play and sleep on my little mouse pad and try to chase the little arrow on the screen.   His sister, Peaches, is asleep on the counter.  Peaches is my avatar .... isn't she gorgeous?

My sister's solution - microwave ovens and regular stove ovens make great storage places for things like cakes, etc.  Just remember to check the oven before turning it on.  I forgot to do that once when I was replenishing my sourdough starter.
And, there's nothing like those little heads poking up from under my arm or the paws coming up, all trying to get the food off of my plate.  But, this auntie loves those kitties and visits them whenever possible.  And, I know that they look forward to me coming over.

My Husbands grandma used to make this cake but she also made a poor mans dip that she poured over the top.  I wish I would have written down the recipe because it was very good!  I have tried to duplicate it but it always turns out a flop.

I never heard of a 1 egg cake recipe. I am going to try it this weekend.
