Too much goop

My mom and I made a cake yesterday for my boss' birthday today.  We made red velvet with raspberry filling and cream cheese icing.  We put the raspberry filling between the layers then attempted to put the icing on top of the filling.  Bad move...there was way too much goop between the layers and everything started sliding.  We couldn't keep the take together, even with picks inserted.  We decided to start all over.  The second cake turned out much better.  We put filling between the layers and icing on the top and sides.  Much better.  The first one sure tasted good though.

When I put a filling in the middle of a cake I always pipe a ring of frosting around the edge of the first layer.  I make the ring about 1/2 to 1 inch high and then I place the filling in the center.  Spread the filling out then place the second layer on top.  Press down gently so the top layer and the piped ring of frosting meet.  Finish frosting, you don't have to worry about the filling oozing out and running into the frosting.

I love red velvet cake and I always make them at Christmas time but I never thought of putting raspberry filling between the layers.
