I love to eat baked goods and of course my children and my husband do too. I am a great cook but unfortunately,I am not a great baker. I try, but, over the years I have learned this about myself and I have come to accept it. However,every once in awhile I try my hand at it. I mean really how hard can this be? So rather than buy pumpkin pies for Thanksgiving dinner I decided to bake them. With enormous effort I ensured all ingredients were ready and painstakingly prepared. I followed the recipe to the last letter. At last the crusts were in,the filling was in,the oven was hot and the pies were ready for baking. But, for some reason The crusts kept falling into the pie fillng. So,assuming I had made the dough to thin I doubled the recipe and tried again. Same Result. EEK. This was taking too much time. I still needed to make dinner preperations and at this rate Thanksgiving dinner would be a day or two late. My nerves rattled; I sent my husband and kids to the park as they had No advice to give. Also,I was getting angry and wanted to spare them the inevitable emotional meltdown which followed shortly. I mean, for goodness sake; ...Who can't bake a simple pie?!? ...Not wanting to admit defeat I called my mother. Through a torrent of tears I railed over the unfairness of it all,the obviously tainted recipe and the pains I had made to ensure the perfect pie(s). Why was this happening to me? I am a good cook, I am a good person, I don't deserve this! Calmly & clearly in her best soothing and Non judgemental voice my mother said..."Honey, the solution is simple and I know you will laugh,later ...But, you don't put a Top on Pumpkin pies...you just bake them & then top them with whipped cream...Remember?"... Insert a long silent pause here on my part, while I absorbed this information... My mother sensing I had reached a point of reason again,then said..."So,now you actually have enough dough for 4 pies...Lucky you..."Give my hugs to the Boys & Have a Happy Thanksgiving ok?! Bye"...
She was right I laughed Till I cried.

Somethimes we just need someone to tell us it is OK. I felt like this women many times. It made me smile!
