End of the month baking!

Often late on cold evenings I get in the mood for a sweet treat. About two months ago, I had a serious craving for chocolate cake, but I knew that we didn't have all the ingredients we would need. I prefer simple recipes and I tend to read a recipe and toss it aside and then concoct what I feel like using the original recipe as a guideline. So on this evening, at month end, when the grocery cupboard was bare and everything was on its last little bit, what started out as a hot-water chocolate cake evolved or devolved (Im not sure which) as need pressed. Having one teaspoon hot chocolate (which would have to fill in for the cocao), we (my best friend and co-baker on this occassion) added the last bit of Horlicks. Distrustful of the result, I decided to supplement this with half a cup of strong instant coffee. The competing smells were awful! I decided to fix this with the zest and juice of a tiny orange. And we baked our end-of-the-month cake. Coming out of the oven the smell triggered the alarm bells in my nostrils. There was no icing sugar to compound my misery and the cake looked rather dry. I decided it was time for drastic measures (I still craved something sweet) and decided to turn the cake into pudding. My favourite is Malva Pudding. It is a baked dessert like cake, but you pour over a sauce and let it caramelise in the oven. With still bare cupboards, we concocted a sauce of water, sugar, milk (in lieu of cream), honey, more orange juice and zest. Poured it over, said our prayers and waited. The result is the most delicious cake-pudding-thing I ever had. When I brought it to the table my sister commented that it is a weird looking chocolate cake. I explained to her that the end-of-the-month salticrack (I mean the chocolate-horlicks-coffee-orange-honey cake-pudding) can be just as nice as one at the beginning of the month. We all had a good laugh. And lo and behold. I have not tasted such a wonderful baked item since! It is one of my fondest baking memories and made me feel good as a baker. I am not the best baker, but my results, even the flops are pleasing and it feels wonderful!
