My Mom contributed many hundreds of baked goods to her churches over the years. In her last church, one of the favorites was a Bacardi ™ rum cake. There was one particular gentleman, who made good money and who liked her rum cake. He would always make a generous contribution (much more than the “sale” price that was marked on the cake). Some of the other ladies were jealous because her cake sold for such a large amount.

For one particular sale, several other ladies made rum cakes. However, one lady used rum flavor instead of the real thing. She made sure that the gentleman got her cake at that sale. Shortly before the next sale, the gentleman contacted my Mom and asked her to make sure that he got her rum cake. Until that man moved to a different church, he made sure that he got a cake that was baked by my mother. He just did not trust the other women to make a cake that was as good as my Mom’s.

Using the "real thing" can make a recipe turn out much better. I've heard some people say they don't cook with wine or other alcoholic drinks, but then they will use flavor extracts, which are very high in alcohol. Perosnally, I don't see anything wrong with using rum, or wine, or whatever the recipe calls for.

I used to have three male friends/co-workers who felt the same way. They asked me one day how much it would cost them for me to make a rum cake. I told them if they supply the rum I wll supply the rest. The next day they came in with a huge bottle of rum and told me to keep it for the next times, as they were expecting many more times.
