Know what you mean about pies... My mother also could make a delicious and pretty pie. I can bake a good tasting one but it still does not look as perfect as hers....So know where you are coming from....

It took me years of watching my Mom make her pies before I finally got it right. My crust was either too thin, too thick, too dry, whatever. Of course, Mom did not follow a recipe so I had to develop that sense of touch she had. The apple pie I made for Thanksgiving was picture perfect, as well as delicious. The secret was piling lots of apples in the pan!

My mother baked cakes and cookies, but no pies.  I taught myself how to bake pies.  I do a good job if I must say so myself!!!

Pies are a difficult thing to master.  Best thing is a great tasting pie may not look pretty but once you eat the evidence no one will ever know!
If nothing else in this case practice does make perfect.
Hardest thing now is getting great tasting fruit.  It has been so long since I have had a really good, juicy, tasty peach. They may look pretty in the store but most are hard, tasteless, mealy things that they call a peach.

My grandmother grew up on a ranch.  She was the only daughter in the family, and thus became an expert in cooking for the family.  After my parents were married for awhile, my grandmother decided that she would teach my mother (her daughter in law) how to make the perfect pie.  Well, she went through all the steps very carefully, my mother was trying hard to be a good student.  When they finished the pie, they tasted the results.........and it was the worse pie my grandmother had ever made.  This story became practically a legend in the family. In any case it proves that everyone is human and can make mistakes.  I just wish I knew what happened, but this all happened before I was born.  Congratulations to you on mastering the art of pie baking.  I also enjoy making pies, and I am called upon each holiday season to bring the pies for family affairs.

I make good pies from scratch.  Hubby likes my pear pie in the fall after we clean the tree.

That's great, congrats! I love pie, I have never made a double crust pie. Maybe that should be my goal for the year.
