Thanks to my Mom, I have always embraced the joys of nature's bounty. Many hours were spent harvesting & preparing peaches, apples, crabapples, persimmons, & (my favorite) blackberries! I always looked forward to blackberry season: from the "out of bed before dawn" to the "snake!!" alerts in the briar patch to the end result of beautifully gleaming jars of blackberry preserves. For very special family gatherings, Mom would use the preserves in a delightfully light jelly roll. It's been years since we've made one, & I think it's time!

I never made a jelly roll.  But it sounds like fun.  Probably even more fun to eat! Tongue out

Jelly rolls are not very difficult. The hardest part is rolling the cake after it has baked so that when cooled it can be unrolled, filled, and then re-rolled. It just takes patience and following the recipe. I love making a Noel Log at Christmas. You can find the recipe on VBB.

I'm trying to post this again.

Sue H.:  Thank you for bringing back memories.  My brother and I used to pick blackberries every year.  There was a big field behind our house.  The first time we went out there to pick we saw a huge flattened cardboard box on the ground in one area.  We didn't know why it was there.  We stepped on the box and out flew many many hornets or wasps.  We moved away from that area quickly.  Apparently someone else had found that out too and put the box there.  We always picked elsewhere in the field.  Never again to step upon the cardboard box.  My mother and I made jelly and also canned them for use in our cereal during the winter.  Thanks for the memories.
