One thing I can remember being taught by my mom is that a soup is one of those meals that can fit almost any need you may have. If you need a dish to last several meals, it works. If you need something to feed a large crowd, it works. If you need to make something now and freeze it for later, it works.If you are looking for a dish to warm you up after a cold day, it works. And , if you are looking for an inexpensive meal, it works. She taught me that a great soup can be your go to meal in a pinch. Now when I met my husband, he WAS NOT a soup guy. Why? He said eating soup was like eating flavored water. To that comment I replied, "Well you just haven't had any good soup." So I prepared, one of my mom's secret weapon soups: her Creamy Chicken Chowder. I served him a large helping with a side of crusty bread. Was he ever leary. But like the gentleman he is, he ate every bite. Later on he asked me if I really made that. I told him yes, I even showed him mom's recipe. He said he had never ate anything so good. It was that moment I sold him on soups. Since then I have made him and my family many soups. I have made my mother's passed down recipes and also created my own as well. I have found that to make the perfect soup I need to remember what I was taught, while continuing to find ways to satisfy. And I try to do that each time I prepare a meal. Now my husband still refers to soup as flavored water...but when I make mom's Creamy Chicken Chowder, he always smiles and says it is his favorite flavored water.

My husband and I had been married for years before I discovered that he didn't like spaghetti. I was stunned. I had served him spaghetti dinners on a fairly regular basis. It turns out that he loves my meatballs so much that he's willing to eat the spaghetti if that's what he needs to do to get the meatballs!
