In Response to Holiday cookies : Hi Jean, I found two recipes for tis cookie (lebkuchen). Here is the first one from Better Homes and Gardens Holiday Cookbook (1965) Noel Fruit Cookies (Lebkuchn) 1 egg 1/2 tsp cloves 3/ cup brown sugar 1/2 tsp allspice 1/2 cup honey 1/2 tsp soda 1/2 cup dark molasses 3 cups flour, sifted 1 1/4 tsp cinnamon 1/2 cup chopped mixed candied fruits and peels 1 1/4 tsp nutmeg 1/2 cup slivered blanched almonds Beat egg; add br sugar and beat till fluffy. Stir in honey and molasses. Sift together dry ingredients; add to first mixture, mix well. Stir in fruit, peels, nuts. Chill several hours or overnight. On lightly floured surface, roll to 1/4". Cut into rectangles 3 1/2 x 2 inches. Place on greased cookie sheet. Bake in moderate oven (350) for about 12 minutes. Cool slightly before removing from pan. Makes about 2 doz. From Betty Crocker Cookie Book 1978 1/2 cup honey 1/2 tspsoda 1/2 cup molasses 1 tsp cinnamon 3/4 cup br sugar, packed 1 tsp cloves 1 egg 1 tsp allspice 1 Tbs lemon juice 1 tsp nutmeg 1 tsp grated lemon rind 1/3 cup cut-up citron (grated) 1/3 cup chopped nuts 2 3/4 cups all purpose flour Glazing Icing (below) Mix honey and molasses, bring to boil. Cool thoroughly. Str in sugar, egg, lemon juice, and rind. Measure sifted flour. Stir in dry ingredients, blend in. Mix in citron and nuts. Chill dough overnight. Heat oven to 400 degrees. Roll small amt of dough at a time, keeping rest chilled. Roll out 1/4" thick on lightly floured board, cut into oblongs 2 1/2 x 1 1/2". Place 1" apart on greased baking sheet. Bake 10-12 mins. or until no imprint remains when touched. Bruch icinig lightly over cokies immediately. Quickly remove from baking sheet. Cool and store in airtight container with cut orange or apple for a few days to mellow. Makes 6 doz cookies. Glazing Icing: Blend 1 cup sugar and 1/2 cup water in small saucepan. Boil until first indication of thread appears (230 on candy therm). Remove from heat. Stir in 1/4 cup conf sugar. If icing becomes sugary while brushing cookies, reheat slightly, adding a little water until clear again. Hope this helps.
