My grandma made the best mayonnaise cake with fudge frosting. I think her mom came up with the recipe in the depression era because it is made without eggs. My mom made it a lot and I do too.

Isn't mayo mostly eggs? I know it has a lot of oil.

This is not it but i found it online:

i think the name is chocolate mayonnaise

cake

Ingredients

3 cups all purpose flour
1 1/2 cups granulated sugar
2/3 cup Hershey's baking cocoa(you can use Nestle's instead)
2 1/4 tsp. baking powder
1 1/2 tsp. baking soda
1/8 tsp. salt
1 1/2 cups real mayonnaise
1 1/2 cups water
1 1/2 tsp. pure vanilla

How to make it

Sift dry ingredients into large bowl, stir in mayonnaise, stir in water and vanilla.
Grease one 9"X13" pan or two " round pans and line with waxed paper.
Bake at 350° for 25-30 minutes or until done. Test with cake tester or toothpick. It should come our clean. Cool on wire rack. ENJOY!
