as you know I LOVE bagels, but this gluten free thing has thrown me a curve! Today I tried baking mixture of Rice flour+potato starch +tapioca starch instead...I added the xanthan gum as well, but I think maybe a bit too much. I got very little rise out of the yeast, even though I proofed it to a great sponge before I mixedd it in. Next time more years, less xanthan. At least they came out tasting better than the mix I got last week with bean flour in it.I'll keep ya posted...

It is hard to reprogram your brain to a new way of cooking.  We have to work with the new choices.  But the end result will be better health, so it will be worth it.  Keep trying!
