I love to experiment with different pumpkin recipe and made pumpkin mochi last month for my gal pals. Ann was one of the ladies who wanted a copy of the recipe and made a batch for a bake sale. She bragged that the mochi was a hit!

Mochi is made from rice flour. It;s nice and chewy.
Ingredients
29 oz can Pumpkin puree
14 oz can Sweetened condensed milk
1 Cup of butter melted
4 Eggs, beaten
2 tsp Vanilla
1 lb box Mochiko-sweet rice flour
2 Cups Sugar
2 tsp Baking powder
1 1/2 tsp Pumpkin pie spice
1/2 tsp Cinnamon

1. In a medium bowl mix mochiko flour, baking powder, pumpkin pie spice, and cinnamon.

2. In a large bowl mix all the other ingredients. Then add the dry ingredients.

3. Pour into a greased 13 by 9 inch baking dish.

4. Bake at 375 for one hour. Let cool. Done.

Forgot to let you know --cut with a plastice knife --it will stick on other knives. The disposable knives works really well,

thanks for giving us the recipe
but  i don't do well with chewy foods since i got my new bridge  so i probably won't try it

Thanks for sharing the recipe Audrey.  This sounds perfect for those who are gluten intolerant, as so many seem to be these days.  Now to find that rice flour at the Asian Market lol.

Rice flour should be available in the oriental section of your stores or if you have a chinatown--it should  be available in the grocery stores

I have tried several different flavors of Mochi and I just don't like it all that much.  I am not fond of the texture. Sort of a cross between a marshmallow and a gummy bear.

I should add however..I have never seen a chocolate coated Mochi if there is such a thing.  That might be alright after all what is not made better by a coating of good chocolate?
