I love to bake and my co-workers love it when I bake as well.
Last summer around July 4th I made an ice cream cake. I used a cheese cake mold to do this with. I took, chocolate cookies and crumbled them with some melted butter and placed it down on the bottom on the pan. (You can use wax paper on the bottom as well). I made a chocolate cake and after cooling place it inside the pan as well. Now the yummy stuff. Use any kid of ice cream you'd like. I used, a french vanilla bean, raspberry sorbet and mint chocolate chip. Let it freeze til it's firm and then ready to eat.
I like using the cheesecake mold cause you can make a pretty good size (height) cake. Everyone will enjoy and keeping it in the mold helps keeping it from falling down.

What a great idea using a cheesecake pan for your creation. I made a copy of your recipe and will make it for 4th of July. This is also great for birthdays, etc. Thanks for sharing.
