Reading of other's happy accidents reminded me of my own. I was making a brown sugar pound cake for my mother's birthday and accidently put baking soda in with the dry ingredients instead of baking powder. I knew it would taste "off" if I used regular milk as called for in the original recipe, I used buttermilk to balance the soda. That combo gave more leavening power to the batter and my cake got "happy" in the oven and rose above the pan and ran all over in the oven! We ate what had stayed in the pan and decided we all liked it better that the original. I made notations on the recipe and we have used the "mistake" version ever since.

Some "mistakes" turn out to be a welcome surprise.  But I could do without the cake running over in the oven... sigh...

Some of the best recipes are the results of mistakes! Smile
