I made several batches of hot pepper jelly and apple cinnamon jelly this past fall they all came out great except for 6 pints of the apple cinnamon jelly. I was going to recook them with some more pectin and my son said not to because we were out of maple syrup and he opened a jar of the what I call apple cinnamon syrup. He said it was great and my brother and his friend who is a Chef are using it for ham and pork roasts. My brother wants more next year,I told him it was a mistake and he said well make the same mistake next year because we want more of it.I laughed and told him I would try.So making a mistake always isn't so bad.

Sure have a lot to live up to now don't ya.  They want to see if you can duplicate and THEN will want the recipe so make sure you write it down as you go. Sounds good to me too especially for the pork roast.

Bless your heart and bless your mistakes.
My mistakes aren't usually like that ... they aren't mistakes, they are failures - lol lol

If it is still edible in any way - it is not a failure.  Burning it, that might be a failure.  But not even that if you can pass it off as charred or blackened.  Sealed

Great recovery!  I can see your dilemma in trying to replicate the "mistake".  Good Luck!!

I love teasing him.I'll just make it and if it comes out right it will melt on the hot meat. What I think is neat the jelly was made from apple peels and cores, things you throw away.I have another recipe to make corn cobb jelly too.

I would love your recipes for both apple cinnamon and hot pepper jellies.  Both of them are great but I have never tried to make them.
