I was learning about cake decorating from my friend while in Germany and decided to bake a Winnie the Pooh cake for my son's class since it was his birthday. He was in 1st grade. Took me about 5 cake boxes since they kept splitting open. Finally had a nice looking cake and started the decorations. Used the stars and I was up till around 5am decorating. Took forever. Everyone loved the cake. I was telling my friend about how long it took me and she asked what size star was I using. I used the small stars. She laughed and said to use the big stars.Wow what a difference the next time I made the cake. It went smoothly and I was done in no time. That was back in 1974.

I know just how you feel. I started decorating in 1982 and think back over some of the mistakes I've made and laugh. I had a friend who wanted me to make a birthday cake for her after just 2 lessons. I agreed, but the coloring on it was aweful. But she loved it and became my first paying customer.

When I first started decorating cakes I used canned frosting and once I swirled it I was proud of myself. Through the years my best friend taught me how to make homemade frostings and using a pastry bag with various tips I now make cakes that impress.

I was a self-taught cake decorator and after many trials and errors, my cakes looked very professional. I even had a cake decorating party for friends which started a new adventure for them and was great fun.

Whenever I try to decorate a cake I always seem to come up short by my expectations but others think they are beautiful.

I know how some of you feel, my mom sure could decorate and make such fabulous cakes and pies. I cannot make a pie crust so use store brought. Wish I could make cream puffs like my mom used to make. Sure do miss her in more ways than one. She was a wonderful person, a great mom and friend.

Going back about thirty years ago I managed a private club in Pennsylvania. One particular week I think a made five individual cakes. One for my husband, one for my son, two for patrons birthday's and a wedding cake for a couple we knew. To this day I don't know how I did it.

I cannot believehow many cakes I made over the years. Tons of candy. My biggest cake was for a Wedding for 750 people 6 tier hight 6 round cakes around cakes around with 6 stairs cases a water fountain. Beautiful 20 dozen roses, ribbons on the stairs cases. I did put my foot down when they also wanted me to cater the wedding. They loved my food. I could only do one or the other.So they chose the cake. I hand painted the figurines for the cake. Six women and six groommen. Flower girs and ring boy. It was so much fun. I would do it again in a flash. But I do like catering better. I cook almost all different kinds of food. French, German,Polish American Japanise all different.

I remember the first cake I made all by my self, I was 9 years old and it was for a teacher at school. The class decided to throw him a birthday party, I ran out of powdered sugar, so to thicken it up I added granulated sugar . The cake was good but crunchie.. I laugh everytime I think about it
