My recipe called for butter for butter cookies, I did not have butter so I substituted margarine, needless to say my cookies did not turn out. Now I know when a recipe calls for butter, I use butter.

Learn the hard way & watch tv bakers: can't use margarine in baking - burns or cookies/other are softer than should be or runny/don't firm up. Worth the calories/fat/whatever you're counting! Store brand is the same as name brand so it's easier on the wallet.

I agree, too. I always use butter when I am baking. Margarine just does not taste the same and definitely does not give you the best taste and results. When you are baking everything turns out better with butter.

I always use butter even if a recipes calls for shortening, oil, or margarine. Everything just tastes better with butter.

Butter is better in many baked items - but butter flavored Crisco can be substitutued in many recipes, and can't be beat in a pie crust! Karen K, Chesterfield, VA

I love real butter.  But I try using small amounts unless it is for cooking.  I will remember to get the unsalted kind for cooking & maybe I will only use it that way.  Margarine has it's place, but it does not seem to be in baking.  Some tubs/packages say - not for use in baking - right on the outside of the product.

If a recipe says butter, no substitution, I use butter.  Different fats cause different results and textures.

I use butter it is much better for you then margarine salted and unsalted both. unsalted if you are cutting down on uour salt.

I don't use anything other than butter when I am baking. I prefer the taste and texture of it. When I can I do use spray  butter because it has zero calories.

When baking cookies I used to use 1/2 butter and 1/2 Crisco. 
Somehow I started using 100% butter and won't change. 
On this site I learned to use unsalted butter.  
Wow - I keep learning new things.
