My recipe called for butter for butter cookies, I did not have butter so I substituted margarine, needless to say my cookies did not turn out. Now I know when a recipe calls for butter, I use butter.

Most of the time anymore if I want one of my older recipies to turn out I use butter, even if it calls for margerine. The new margerine that is "healthy" is so much water you can not really cook with it. Thanks for sharing.

I agree , I always use butter. If you are going to make it from scratch you might as well use the best.

When using butter make certain whether the reciped calls for salted or unsalted. They are not always interchangeable in a recipe!

I always use butter and not only that, I always use unsalted butter. I learned that trick in cooking class.

Mom used margarine, so I used margarine. Then one day my husband said - this recipe calls for butter! So I used butter. What a difference in the flavor of my cookies! Now I never even buy margarine

We never eat/use butter in our house for our meals. My husband has high cholesterol so I have learned to what I call "hea;thify" recipe using little or no fats at all in recipes. When I musy I use mostly olive oil. The onlly time I use butter is for holiday baking and unfortuneately there is no way around that. My Mom, sisters and a few friends get together for a cookie swap just begore Christmas so we don't all have to bake a lot of different cookies. We just each bring several dozen of 1 or 2 different cookies and then bring home the same number of several different types. This way we each of a variety of cookies for the holidays. I use them as gifts for neighbors, for school parties, and they're handy to have around when some unexpected guests drop in. The other problem is how to keep a husband with high cholesterol away from them. I have learned one trick - hide them in the freezer until ready to use!

I also agree with Linda M. some recipies just can't be changed if you want the rich butter taste

I would also substitute if I needed but like you said somethings can't be substitited. I tried celery seed in dressing once for celery and it tasted awful. So bad I wouldn't even eat it. But it doesn't hurt to try cause then you know if you can when you don't have the ingredient. We all learn from our mistakes and trying different things. Here's to good bakers and memories. my dad was a diabetic and all the illnesses that usually go with it/high cholesterol,blood pressure when i baked if he was going to visit i always made a batch using butter flavored crisco as long as you add the water as directed on the side they actually tasted pretty good he enjoyed them

I agree use butter too. I have read all the ingredients on margarine and butter. Butter has all natural ingredients. Use in moderation as normal with all things. So much better with butter on it. Have tried Healthy Smart and it is good. But for baking there is nothing like butter. But when you have medical problems you must come up with alternatives. Happy Thanksgiving to all

My wife just received an email last night entitles - "Butter vs Margarine." It waid alot of positive things about Butter but have to admit that we like the taste of Margarine better and then she also agrees that in alot of things it cooks better.

I use butter all the time,espically in recipes, cakes and cookies,candy toffee, and etc. there is no subititute for butter.

I switched to butter for everything. At least I can pronounce all the ingredients & it just plain tastes better. I seem to use less of it as well than soft margarine.
