I remember My Aunt and uncle lived next door to us. They were getting ready to move far away. My Aunt & uncle had us over to dinner. This was odd because they never had anyone over. They always seemed to show up at everyone else's house at dinner time!! Well, she made this really strange meatloaf. We found green beans, a few peas and some things that I'm not sure about. I asked her why she put these things in her meatloaf, she said she saved all little dabs of leftovers and put them in the meatloaf to use them off.

My mom did that with roasts and poultry turned into soup - we never knew what would be added.

Cute story! It reminds me of when I tried to get my fussy son to eat vegetables. I put peas & carrots in a blender, then hid them in the meatloaf!

My husband's mother used to make "more". It was everything left over in the refrigerator thrown into one pot. If you complained you got more. He says sometimes there would be cottage cheese, peas, meatloaf, peaches, chicken, tomatoes, and who knows what else. It sounds like garbage to me.

This story made me think of my mother's cousins who didn't eat meat. We went to their home once when she made a cottage cheese loaf (instead of meatloaf), which was gray and not all that appetizing. She also served macaroni and cheese, which wasn't that great either. The best part of the dinner? The carrot cake for dessert.

I KNEW SOMEONE WHO WOULD FREEZE ALL LEFTOVER VEGGIES, AND ADD THEM TO A POT OF HOMEMADE SOUP.
NO ONE EVER KNEW, AND AS LONG AS THE VEGGIES WERE FROZEN,AND NOT IN THE FREEZER FOREVER,IT WAS A GOOD WAY TO PINCH A FEW PENNIES.

The meatloaf that my mother in law makes has carrots and green beans put thru the meat grinder along with the raw meat. Then salsa on top when she forms the meatloaf with a indentation on the top before cooking. I still like my wife's more though. She uses different ingrediants

I always add a handful of frozen mixed veggies to meat loaf, enchiladas, spaghetti etc. It's always
good and I don't have all those extra pans and bowls. And since I live alone, no one complains.
