My mother passes away in 2000. It's been sad ever since for family gatherings at our birthdays, Easter, Thanksgiving & Christmas. One Christmas I believe we decided instead of the "traditional" ham, we decided to have a "Mexican" meal as our mother was Spanish. As the oldest daughter, when she passed, I made sure I got her recipes.... all of them... which she had multiple copies of. My older brother wanted a couple which meant something to him as she made these dishes for him when he was younger. That year, we pulled out her recipes and fixed her chili relleno, rice, enchiladas, and a dessert she had made in the past. WE spent the time reminiscing of our childhoods and the memories each of us had. It was one of the best Christmas dinners we ever had since her passing remembering all the wonderful things she was to each and every one of us. My husband is the only one who never met her, but wishes he could have after hearing many of the stories. He loves "her" cooking as we make it today.
