Baking pies is a tradition on my mom's side of the family. She has baked pies with my grandma and aunts her whole life and has passed the tradition on to me. She creates the flakiest crusts I have ever tasted and was dubbed " The Official Piemaker of the AZ Diamondbacks" by Buck Showwalter.

The Proffitt Pie Crust:
This recipe makes a standard 2 crust pie that tastes great with any filling. Ingredients: 2 cups flour, 1 tsp salt, 2/3 cup + 2 tbsp shortening, 5 tbsp water. Mix flour and salt. Mix shortening into flour mixture with fork. Sprinkle in water and continue mixing with fork until flour is moistened and dough almost cleans side of bowl. Roll out and place into 9" pie pan. Fill and bake @ 425 degrees F for 40-50 min or until crust is a golden brown.

Rhubarb Pie:
Rhubarb, a flavorful member of the buckwheat family, is an excellent source of vitamin C and tastes great in a pie. Ingredients: 1 1/4 cup sugar, 1/4 cup flour, 1tsp- 1/4 cup grated orange peel, 3 cups cut-up rhubarb, 1 tbsp butter. Pre-heat oven to 425 degrees. Stir together sugar, flour, and orange peel. Place 1 1/2 cups rhubarb into pastry lined pie pan and sprinkle with 1/2 of the sugar mixture. Place the rest of the rhubarb on top and sprinkle with the other 1/2 of the sugar mixture. Slice butter and place on top. Cover with uncooked pie crust top. Cut slits into top crust. Seal and flute. Cover edges with aluminum foil to prevent excessive browning. Remove foil for last 15 min of baking. Bake for 40-50 min or until crust is brown and juice begins to bubble through slits in crust.

My mouth is watering for a big piece of your pie. I haven't had this pie since my Grandmother passed in 1989. Thanks for sharing. I will be making two of these as soon as I find the rhubarb.
