My father was allergic to milk and wheat flour, so cookies weren't something made often. However, my mother would make merengue cookies with semi-sweet chocolate chips in them for us (and him). She would make them at night and let them sit overnight in the oven - it was sooo hard to wait - sometimes we'd sneak out around midnight and crack open the oven to get one off the brown paper bag she would use (instead of parchment paper). Yum. And now, I can never get them just like I remember hers, even though I've tried different recipes. Oh well, then memory is sweet!

There is a recipie that uses 1/2 cup sugar, 1/2 cup choc. chips.1/2 tsp. vanilla and 2 egg whites.
