Very interesting.  Thanks for all the input on these liners ladies.  I had thought about getting some but never got around to it.  Not sure if I have any room to store them though unless I get rid of a lot more things from my kitchen.

I also noticed with the heavier Silpat the cookies did not brown as they normally would.
I have not even thought of using the reusable baking mats in quite a while I have become so used to using the parchment that it is second nature now. I have a box in use and a box in reserve at all times.  The one I am using now I think I got at Costco and it has lasted quite a while.  (I admit I do not bake cookies every day like some people we know....Nancy..)

For me it is a toss up.  I sometimes use the pads since my daughter bought them for me one Christmas.  I more often use the parchment paper.  Either make cleaning up so easy!  Just finished raisin-filled cookies this afternoon and did them on parchment paper.

I had to do a Costco run today, and they had a 3-pack of silicone mats for $14. I'll be trying them out this weekend. One thing I don't like about parchment paper is that it slides around too much. My favorite baking pans are the air filled ones, with no edges, and I'm always catching the paper as I put the pan in the oven. That's one reason I asked about the mats. I'll post my results later!

verlee,
did you check the link gale gave us yesterday about the care of silpat

it says
"use silpat ......w/ regular, NON-INSULATED baking pans. Using it w/ an insulated baking pan will not produce optimum results."

I find that the air insulated pans you have to either increase bake time or increase oven temp.  With the silicone mat you may have to bake a bit longer as the silicone pad acts like an insulator itself.  Great if you are doing very delicate cookies or many pans of cookies as the silicone mat will keep the pan from transferring the heat as quickly to the cookies.

I have 3 or 4 insulated cookie sheets and 2 13X9 insulated pans and I find that I do not use the 13X9 as often as I used to now that I have a USA Pan (I think that is the brand...great pan.) I do use the insulated one for Lasagna as it keeps it from getting dried out.

Thanks, Nellie. I missed that important bit of information! I think that now that I have 3 of the mats, I'll experiment with my regular baking sheets and see how that goes.

H.M., I'm storing my mats right on top of the baking pans so it doesn't take up any extra space in my cupboard. That's also a reminder for me to use them. lol

I have 3 sil pats.  It depends on what I'm doing whether I use them or not.  I have 2 that are the half sheet pan size, and one that is smaller.  I bought 2 of them at Williams Sonoma and the other I bought at a specialty kitchen store.  They were pretty expensive, but I really like them for certain things.  I have one recipe that is sort of a toffee, gooey cookie and they are perfect for that.  Other times I just use parchment paper.  They are also really good for delicate cookies.  I can't remember that I have had any problem with browning.

Hi Ladies. I'm new here and saw this post.  I use a silicone baking mat often.  I never had any browning issues.  They come out just fine.  I save quite a bit on parchment paper.  And it's also Eco Friendly, i don't throw as much away.

Another thing I do is bake artisan bread on it.  Before when I used foil and lots of flour to prevent sticking, it still does.  A LOT.  When I bake bread on my mat, it comes out perfect.  Nice browning on bottom and no sticking.  It's great.  I bought mine at http://www.getmymat.com.  I think it's worth it.  Thanks.

Welcome Katie, and thanks for the great idea about using the mats for bread baking. I don't bake bread as much as I used to, but will remember this for the next time my son visits and begs like a puppy for homemade bread!!!

I have a Silpat mat and use it for one sheet.  I always bake 2 sheets of cookies at a time.  The other I use parchment.  I've been known to re-use parchment if it still looks good after one batch.  I like the Silpat, but think it might make the cookies spread a bit.  What do you guys think about the spreading?
The Silpat mats are quite expensive.  I think I've seen them for about $16.
