Verlee,I used the silpat mats at the deli and also at Subway and I love them.The cookies and bread just slide right off.The clean up is quick too. Using silicone mats would save you in the long run vs.parchment paper.The mats last for years.

I've wondered about silicone mats ....... I spend so much on parchment - BUT I get to throw parchment away and never worry about cleaning or burning it.
I hope we get lots of information and opinions.

I use silpat mats for baking cookies and feel they so a good job.  They can be wiped of and used again and again.

I have a silicone traditional style rolling pin and a silicone French style rolling pin that I love!  I also have 2 different sized silicone mats that I use when I make candy.  The candy comes right up and the clean up is a breeze!  I roll my pastry dough on my dough disc that is covered with a pastry cloth.  I only use parchment paper if the recipe specifically says to do so.

One more thing about Silpat .............. How much does it cost?
Another thing .....  How many do you need to bake cookies?  (I almost always have 3 or
 4 sheets loaded at one time)
My local Walmart doesn't carry things like that so I would have to go to
Michaels which is always very expensive.

Use mine all the time - love them! I also use silicone baking pans, muffin pans, etc., with great results!

Cheryl ---- Oh, my goodness .... I've never even SEEN a silicone pan or muffin tin!!  Where do I look?

i bought silpat when it first came out  and gave it away soon after
i couldn't seem to get the cookies done on it and you had to let it cool completely
also it had to be stored

also, you can not wash it with soap               only wipe it    and it always felt  greasy to me

but if you want to try it nancy       bed bath and beyond has it on their website

I have a Silpat as well as another silicone mat.  They stay rolled up in the drawer for the most part.  I find I reach for the Parchment paper more often.  I also purchased pan liners that are almost like Teflon coated fabric. They came several in a box round and a dew rectangular ones that you could cut to fit a 13X9 or other square or rectangular pan.  I used them quite a bit but I found that I like the parchment much better.
Washing the liners is pretty easy the silpat I wipe off and put away.
But I still find the parchment faster and easier. 
Nancy I think you can get some inexpensive silicone mats to try or look in the close out section at Bed Bath and Beyond I often see the pan liners that you can cut to fit.  Try that to see if you like that rather than parchment.

I do not recall the brand I have I think I purchased them at one of the Kitchen outlet stores in one of the outlet malls.
I did a quick search and Amazon has several of the ones you can cut to fit.  They are Teflon coated there is a roll 13X70 for $19.98 another is an order of 2 that are 17X25 for $14.99 another that is 13X15 for $7.98
All are easily cut to fit any pan.

Ladies I was looking last night and Target has all of this for a lot less.Check on line.I love Targets Kitchen dept,so many great things they had the silpat and silicone bakeware.We washed our sipat mats everyday in warm soapy water after use at Subway,I don't think the health dept would have approved if we didn't.We used them all day without washing but were washed at the end of the day.I'm not sure if there is a difference between professional silpat mats and those sold to the general public.

.We hung our's over a towel bar.This could be done at homa also on the back of a cupboard door.That greasy feeling is normal for these this is their nonstick quality.

I dont use the mats..I guess I have been lucky every time I buy parchment paper its under a dollar a roll i have several rolls in the cabinet...going to use them for Christmas cookies

Have never used a baking mat of any kind.  If I use anything at all, it is parchment.  I watch for coupons (there have been lots lately) and sales.  I should buy stock for parchment, I have a whole shelf of parchment boxes!  I use it for lots of things....not just baking.

that also says to clean with a damp sponge     and  a small amt of soap may be used when necessary, my instr said none
it also says it must be stored flat------not folded or rolled  and it was in the way       so i gave it to a friend---------she didn't like it either
and my cookies would not brown on it
